I made this recipe for peach cobbler today for my dad for father’s day. He, and everyone else, loved it! He even said it put it in the top 15 best father’s day (before the cobbler it was 25th best). Anyway, this recipe is better than I thought it would be and relatively easy to complete!

Perfect for summer. I am into juicing now and find that it is cheaper to buy fruit and veggies while on sale.
Does anyone know just how long fresh, frozen fruit and veggies last in the freezer before the icky freezer burn taste starts????

It’s taco night! I have a very busy week ahead because it is the last week of my first set of summer classes (confusing? tell me about it). So, I wanted to make some something quick, easy, and comforting.
I used a recipe from Cooking Classy for the filling. It is basically quinoa, black beans, corn, tomatoes, and spices. It turned out really good and would be easy to interchange some ingredients to create a different taste.
Topped with a little Daiya and guacamole= deliciousness!
